Simple Sausage bake
Inspired by Jamie Oliver’s Comfort Bake
A delicious and easy sausage bake that all the family will enjoy!
INGREDIENTS
600g Cherry Tomatoes
4 Cloves of Garlic
200g Focaccia or bread
600g Cannellini Beans
12 Highland Castle Farms Chipolatas
Olive Oil
Red Wine Vinegar
Method
Preheat the oven to 180ºC/350ºF/gas 4.
Halve the cherry tomatoes, peel and finely slice the garlic, and tear the bread into bite-sized chunks.
Place everything in a 30cm x 35cm roasting tray, pour in the beans and their juice, drizzle with 1 tablespoon each of olive oil and red wine vinegar, add a splash of water, and mix it all together.
Pinch and twist each of the sausages in the middle to make them into smaller sizes, then randomly place them around your tray, lightly pressing them into the beans and tomatoes.
Roast for 45 minutes, or until everything is golden.
EASY SWAPS:
We've used chipolatas, but you could use our Cumberland or even Traditional sausages.
Cannellini beans are great in this recipe, but you can swap in any type of bean you’ve got, tinned or even lentils.
Don’t worry if you don't have fresh tomatoes. Tinned tomatoes or passata work just as well.
